This neat little recipe will give you some bread in just 10 minutes or so! No oven; no yeast; no kneading, and just 3 ingredients. And it's very flexible as far as those 3 ingredients go. You need to try this one, for sure.
Ingredients:
2 cups self rising flour
1 cup buttermilk (or any other milk you may have on hand)
¼ cup of vegetable oil (or butter, or shortening or lard)
Process:
Place a large cast iron (if you have one with a tight fitting lid) on LOW heat
Stir everything together in a medium size bowl, but don't overwork it
Dump out onto a work surface upon which you've dropped a big hand full of flour
It's a sticky dough, so flour your hands well if you intend to form the pieces by hand.
Cut into 8 pieces (use a biscuit cutter if you wish)
If your skillet has reached the LOW temperature required, you may immediately place the formed pieces in it and cover it. Don't place too many pieces into the skillet at once; 4 or 5 at a time is best
Let it “bake” for 5 minutes, then turn them all over and let them bake for 5 more minutes
NOTES:
“LOW” heat is a very problematic setting! The LOW setting on your range may very well be different than the LOW setting on the range you had at home while you were growing up. You just have to experiment to find the right setting for your stove. It doesn't hurt to start a bit lower that LOW so you don't burn the bread!
You will not need to add any oil to the cooking vessel, since you're baking the bread, not frying it.
If you have the time, let the pieces of dough “rest” for 3-5 minutes before baking them; they will rise a bit and be even better.
Remember: they're like biscuits, so don't work the dough too hard; just until the ingredients are combined.
You can also turn this into a “pone” of bread by just plopping the whole bowl of dough into the warm skillet. It will take longer to bake on each side, of course, but the results are just as satisfying.
