With the county’s COVID-19 case numbers plummeting, it might seem like the virus is in the rear-view mirror but a health official encourages folks to continue to get vaccinated.

When I was a freshman my father, Tim, and I moved to Mason from Southwest Colorado, where I grew up.
The Mason High School girls varsity golf team had a great outing on May 11-12. The Cowgirls placed second at the UIL 2A Girls State Golf Tournament held at Legends Golf Course down in Kingsland.
As a team under head coach Aaron Faith, the Cowgirls were the runner-up with a total score of 597.
The Mason High School varsity baseball team continued its exciting 2021 postseason run this past weekend as the Punchers defeated Premont High School in a best-of-three series to win an area championship.

For the second straight series, the Punchers would drop the opening game and had their backs against the wall following an 8-3 loss to the Cowboys on Friday, May 14 at neutral site Veterans Memorial High School in San Antonio.

At 5:29pm on Mother’s Day Kathryn Sanders Matthews received the most precious gift of all. She was able to once again dance with the love of her life, who left this earth almost seven years prior.
Born at the home of her Aunt Vadis in Fredonia on October 26th, 1928, Kathryn grew up on the land here in Mason County, attended the Fredonia School, and then graduated from Mason High School at 16 years of age.
Nicole Michele Cardoza of Alpine, went home to the Lord on Saturday, May 8, surrounded by her loving family. Nicole was born on March 27, 1979, to Enrique Dominguez Jr. and Elva Gonzales Dominguez. She was raised in Mason and was a graduate of Mason High School. On June 22, 1996, she married her High School Sweetheart Edward Cardoza and their marriage was blessed with five children.

In continuing with my “Beef-based” recipes for the month of May, I am sharing my shredded beef wraps. Beef is known as red meat and it gets a bad “wrap” sometimes. It is really a healthy choice though. As I said last week, it is loaded with nutrition. Being involved in the beef industry, I think it is incredibly important to cook with beef.
This week’s dish is crock pot shredded beef wraps.
This recipe started out as a buttermilk biscuit recipe. The biscuits turned out so well I thought I’d see if there were other variations out there to try, and sure enough, this recipe popped up.
Ingredients:
2 ½ cups self-rising flour
½ cup sugar
½ teaspoon cinnamon
½ cup unsalted butter
1 cup buttermilk (and add more if the dough doesn’t quite come together)
Cinnamon-sugar (for the tops; mix ¾ cup of sugar with 2 tablespoons of cinnamon)

It looked good, it smelled good. I could hardly wait to see if it tasted good, too.
The waitress kept bringing the tantalizing plates of fried catfish right by me as she served the others at the table.
I had only a light lunch. I had been on the road all afternoon.
This spring has been challenging, but at the same time abundant. Although the gardens are slower than normal, the fruit and nut trees are hanging full. And when the sunshine breaks through the clouds it will be a garden extravaganza!
I am referring to this season as my lesson in adapting to the weather.
We have been blessed with showers this week. The hail caused a lot of damage to those in the path of the storm. Hopefully, they will get repairs done soon. We pray that we will not have any more hail storms, but continue to be blessed with rain showers.
