Skillet Texas Hash
You know I love one-dish and Crockpot meals. You will love this recipe because you do everything in a skillet. Serve with a side of cornbread and a green mixed salad and you will have a complete mouthwatering meal.
(1-lb) pkg. ground beef or turkey
1 onion, chopped
1 green bell pepper, chopped
1 jalapeño (chopped)
1 cup long grain rice
2 cups water
1 (14.5 oz.) can fire roasted diced tomatoes

Last week was Children’s Book Week, the annual celebration of books for young people and the joy of reading.
Established in 1919, Children’s Book Week is the longest-running national literacy initiative in the country. To celebrate, we’ve added new easy books and new non-fiction easy books to our children’s collection. We hope you’ll read with your children and bring them in so that they can choose their own books sometimes.

My U.S. Marshall friend recently posted a question on Facebook, asking what the best western movie ever made was. A few people had offered replies by the time I saw the post, and all of them were wrong. The answer, of course, is Lonesome Dove. Some claimed Tombstone, which is a great western movie, and the closest second to Lonesome Dove there is.
Some will, some won’t, I might! However, I’ve gotten really good at the “Don’t want ‘a!” If it doesn’t need doing right now, it doesn’t get done. Oh, eventually it will get done, but on my time table and not someone else’s! As long as we’ve got clean clothes and underwear, then it’s just fine with me.
I used to not be like this.
Uncle Mort and Horse Sense...
Horse sense--my 104-year-old Uncle Mort maintains--is much more than stable thinking. As a charter member of the “spit and whittle club” at the general store in the thicket, they weigh the world’s weightiest problems, often with wild abandon.
If only two geezers show up, arguments are common, but not much is settled.
May is here but it feels like July. The leaf raking party continues. It is going slower now. It gets too hot to do much in the afternoon. Hopefully this is the last week. I couldn’t have done this without grandson, John. He is getting to be a pro at loading leaves, and he loves to gather them with the leaf rake.
Class Meetings continue on Tuesday evenings at the Art United Methodist Church Parsonage at 6:00 for soup and 6:30 for the meeting.
Mother’s Day is Sunday.

At tonight’s Commissioner’s meeting I attempted to relate an avenue that the city might look at to purchase certain materials through government surplus and/or corporation surplus. The idea came from Dave Davidson’s comments regarding such purchases.

You are implying that “trained” news reporters factually report and don’t input any of their own ideas.
This week is National Police Week, and Monday was Police Officer’s Memorial Day, which honors and remembers police officers who gave their lives while on duty. As you may know, the past couple of years have been very dangerous for officers. This week is especially significant for Craig and me because our son is a patrol officer in his fifteenth year of service.
